Creamy Coconut-Cilantro Cauli-Rice

Ingredients:

  • 2 (12 oz) pkg frozen riced cauliflower
  • 2 Tbsp olive oil
  • 1 cup unsweetened coconut milk
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup chopped fresh cilantro

Directions:

  1. Cook cauliflower in hot oil in a large saucepan over medium heat 5 minutes, stirring often.
  2. Stir in coconut milk, salt, and pepper. Cook 8 to 10 minutes or until creamy. Stir in cilantro.
